Every cup we pour at Brush & Lever starts with beans roasted by Doe & Fawn Coffee Roasters — a speciality coffee roastery based at The Grainstores, Crabtree Farm, in Aspley Guise, Buckinghamshire. We chose Doe & Fawn because they share what we care about most: exceptional coffee, freshly roasted, with great people behind every step.
Doe & Fawn was co-founded by Aaron and Mike. Aaron has been ingrained in the coffee industry for 15 years, having held virtually every role there is — pulling shots, wholesale and beyond — and leads the roasting side of the business. Mike brings a retail background and a deep belief that speciality coffee, and the people who work in it, deserve to be shared. Together they've built a roastery rooted in curiosity, craft, and care.
Doe & Fawn source, develop, and freshly roast to order — focusing on exceptional single origin speciality coffees alongside thoughtfully developed blends. Their range is curated rather than overwhelming, organised across three tiers.
Versatile, friendly, approachable coffees — suitable for all brewing methods and espresso-based drinks.

Limited release coffees — something a bit different, or simply super special.
Beyond wholesale, Doe & Fawn runs a Coffee School at The Grainstores offering courses, cuppings, and roastery tours. Every Saturday from 9am–1pm, the roastery opens as Shutters Up Cafe — serving their freshest coffee alongside pastries. They also support KidsOut, a UK children's charity, donating all profits from their Finite coffee.
